Pecan Sour Cream Biscuits, #6 = Romeo & Juliet

Due to the fact that I've been super out of touch, and out of cooking practice if I'm being quite honest, I'm posting this recipe which I actually baked back at the beginning of December.  Better late than never, no?  Yes.  I took these biscuits to dinner with some family/friends and they were a BIG, BIG hit.  Dick loved them, I loved them, our cousins/friends loved them, and they went surprisingly well with the delicious ribs that cousin John slaved over for dinner.  They are nice and sweet...just like Romeo.  Again with the bad transition, I know.  But I'm kinda flying by the seat of my briches here, so you'll just have to deal.

Pecan Sour Cream Biscuits
From Dorie Greenspan's Baking From My Home to Yours



Ingredients

2 c. all-purpose flour
1 Tbsp. baking powder
1/2 tsp salt
1/4 tsp baking soda
1/4 c. packed light brown sugar
5 Tbsp. cold, unsalted butter, cut into 10 peices
1/2 cold sour cream
1/4 c. cold milk
1/3 c. finely chopped pecans, preferably toasted


Directions

1. Center a rack in the oven and preheat to 425 degrees F. Line baking sheet w/ silicone paper.
2. Whisk the flour, baking powder, salt and baking soda together in a bowl.  Stir in the brown sugar, making certain there are no lumps.  Drop in the butter and, using your fingers, toss to coat the pieces of butter with flour.  Quickly cut & rub the butter into the dry ingredients until the mixture is pebbly.  You'll have pea-size pieces and smaller.
3. Stir the sour cream and milk together and pour over the dry ingredients.  Grab a fork and gently toss and turn the ingredients together until you've got a nice soft dough.  Now reach into the bowl with your hands and give the dough a quick, gentle kneading - 3 or 4 turns should be just enough to bring everything together.  Toss in the pecans and knead another 2-3 times to incorporate them.
4. Lightly dust a work surface with flour and turn out the dough.  Dust the top of the dough very lightly with flour and pat the dough out with your hands or roll it with a pin until it is about 1/2 inch high.  Don't worry if the dough isn't completely even.
5. Use a 2-inch biscuit cutter to cut out as many biscuits as you can.  Try to cut the biscuits close to one another so you get the most you can out of this first round.  By hand or with a small spatula, transfer the biscuits to the baking sheet.  Gather together the scraps, working them as little as possible, pat out to a 1/2 inch thickness and cut as many additional biscuits as you can; transfer these to the sheet (the biscuits can be made to this point and frozen on the baking sheet, then wrapped airtight and kept for up to 2 months.  Bake w/out defrosting - just add a couple ore minutes to the oven time.
6. Bake the biscuits for 14-18 minutes, or until they are tall, puffed and golden brown.  Transfer them to a serving basket.


#6: Romeo & Juliet



Clearly this is the longest clip ever, but it's my favorite part of the movie!  I was in the 6th grade when I first saw this movie, and totally swooning over Leo - after falling in love and crying my eyes out (7 times!) in Titanic ha!  Anyway, I still think this is one of the sweetest scenes ever.  The whole movie isn't the greatest, but this love story is probably the most famous love story in the world, so it makes my countdown this year.  Because of cutie-patutie DiCaprio, the honorable mention for tonight is Titanic.  Loved it then.  Love it still.  I'll never let go.

Holly Jolly Pumpkin Bread w/ pecans, cranberries & white chocolate...HEAVEN

Well, my foodie friends, 'tis the season...finally! I have to say that although I've lived in the state with the "greatest snow on earth" my entire life, I've never been a fan of it outside of the week before Christmas until New Year's Day. But I have always and will always be a fan of the Christmas season! That being said, I have to post one last pumpkin recipe, and then I'll get going on my Christmas treats. But to be 500% honest with you, I'll definitely be making this all throug December to give as holiday goodies to friends & neighbors, cuz they're gonna LOOOOOVE it, just like you are! It's so good, in fact, that the loaf I gave to my Mom & sisters was half eaten before they even got home - that means they were breaking off pieces and eating with their hands in the car because they just couldn't wait until they got home to use a knife and plates. hahaha TRUE STORY!
Pumpkin Bread w/ Pecans, Cranberries & White Chocolate



Ingredients

1 c. all purpose flour
3/4 c. wheat flour
1 tsp. baking soda
1/4 tsp. salt
1 tsp ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. cloves
1/4 tsp. ground ginger
1 1/2 c. pumpkin puree
3/4 c. brown sugar
2 eggs, beaten
1/4 c. oil
1/2 c. vanilla yogurt
1 c. white chocolate chips
1/2 c. dried cranberries
1/2 c. pecans, chopped & toasted
Directions
Mix flours, baking soda, salt & spices in a bowl.
Mix the pumpkin puree, sugars, eggs, oil & yogurt in another bowl.
Combine the wet & dry ingredients.
Stir in the chocolate chips, cranberries & pecans.
Pour the batter into a 9x5 inch loaf pan. (I used two 8.5 x 4.5 x 2.5 pans)
Bake in a 350 degree oven until toothpick pushed into the center comes out clean, about 60-70 minutes.

"ultimate" chocolate chunk cookies

I got this recipe from Woman's Day magazine, and don't get me wrong - they're delicious! - but I don't think we should just throw the word "ultimate" around like its just any other word. The pecans and coconut definitely earn a "fabulous" or a "stupendous," but I just don't know about the "ultimate." Thus the quotation marks. hahaha who cares, right?! Whatever. Really though, these cookies were an absolute HIT with my family at our big birthday celebration yesterday! My sister, who doesn't even like nuts or coconut, ate about 5 of them. If that's not something, I don't know what is! So, I hope you enjoy these fabulous, stupendous, ultimate chocolate chunk cookies!

Ultimate chocolate chunk cookies

Ingredients
2 sticks (1 c.) unsalted butter, softened
1 c. packed brown sugar
1/2 c. granulated sugar
2 tsp vanilla extract
2 large eggs
1 tsp baking soda
1 tsp salt
1 1/2 c. all-purpose flour
2 c. old fashioned oats
1 1/4 c. sweetened flaked coconut
8 oz. semisweet chocolate chunks/chips
1 c. coarsely chopped toasted pecans


Directions
1. heat oven to 375 degrees. beat butter, sugars and vanilla in a large bowl w/ electric mixer until fluffy. beat in eggs, baking soda and salt until blended. on low speed, beat in flour until just blended.
2. stir in oats, 1 c. flaked coconut, all of the chocolate chunks & chopped pecans. using 2 tbsp dough for each cookie drop mounds 2 in. apart onto greased baking sheets. sprinkle tops w/ rest of coconut.
3. bake 11-13 minutes until golden on bottoms and around egdes. cool on baking sheet 2 minutes before removing to wire rack to cool completely.

blueberry maple oatmeal muffins w/ pecan streussel

Top of the muffin to ya! All the Seinfeld fans know that I'm not just being whitty when I say that, but quoting the wonderful Elaine Bennice. Pretty sure Elaine wouldn't have tried to give the bottoms of these muffins to the homeless - she would have eaten them right along with their tops! When I saw this recipe I thought they sounded good. Good enough to wake up earlier than normal and make them before I went to work yesterday (only food could get me out of bed before I absolutely HAD to)! This recipe is killer and I'm pretty sure I'll be making it for many breakfasts in the future.




Blueberry Maple Oatmeal Muffins w/ Pecan Streussel
From the Closet Cook

Ingredients

-batter-
1/2 c. brown sugar
1/4 c. maple syrup
3/4 c. vanilla yogurt
1 over ripe banana
1/4 c. butter, melted
1 egg
1 c. all purpose flour
3/4 c. whole wheat flour
2 tsp. baking powder
1/2 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. salt
1 c. blueberries (fresh or frozen)

-streussel-
1/4 c. pecans
1/4 c. all purpose flour
pinch cinnamon
1/4 c. brown sugar
2 Tbsp. butter, melted

Directions
1. Mix brown sugar, syrup, yogurt, banana, butter, egg, & rolled oats in a bowl & let sit 10 minutes.
2. Mix flours, baking powder, baking soda, cinnamon & salt in a bowl.
3. Mix wet & dry ingredients along w/ berries until just mixed.
4. Spoon mixture into greased muffin pan.
5. Mix pecans, flour, cinnamon, brown sugar, & butter until crumbs are formed.
6. Spoon streussel onto muffins.
7. Bake @ 375 degrees ~ 20 minutes.
*I'm definitely going to double the streussel next time I make these, just fyi*
